Gentle Jerseys
Jersey cows are gentle, inquisative creatures that are perfect for the small dairy. They give a rich whole milk with high cream content. They are great grazers that tolerate heat well. They don't need a lot of grain, although we do suppliment their diet during the harser winter months.
Jersey beef is also wonderful. It's tender and tasty. It has ranked for four decades among the very best for tenderness, flavor and juciness in expert studies and consumer panels. We currently offer beef for sale by the quarter, half or whole. We're looking into the rules and regulations to be able to sell individual cuts, so stay tuned. This is Morine
Morine is our daughter's favorite cow. Faith is only 2 in this picture and we have no fears of her getting hurt by our cows. She gives Morine pats and hugs and cuddles almost every day. Morine even lets Faith ride her and climb all over her when she's laying down. Some of our younger cows aren't as affectionate as Morine, but they all are gentle around her.
Future Recipe Location
Jerseys have a very high cream content which makes their milk rich and tasty. You can easily skim off the cream to add to your morning cup of coffee, or to make delicious ice cream, cheese or even butter. Keep watching this page and we'll add some recipes for you soon.
Milking Time!
Here's Marc milking one of our girls. We milk twice a day in our 71 year old historic barn. We operate a Grade "A" dairy with our Jerseys. This means that our milk is tested for bacteria, somatic cell count as well as butter fat, protein and general quality. We strive to produce a quality milk. We are working on our Organic certification and hope to be able to be certified in the near future.
People have asked us why we don't advertise selling raw milk. Our answer is simple: Although it is legal for people to purchase raw milk (provided they have their own container), it is NOT legal for us to advertise. We've also been asked if we'll ever sell bottled milk, butter, ice cream, cheese or the like. There are so many rules and regulations as well as certifications and licenses, not to mention the equipment to purchase and the separate building to put the equipment, that we just don't have the time nor funds at this time. We have been approached to supply raw milk to a startup cheese company from the Chicago area however. We'll post more about that as it develops.
